Description
The scent and flavor of thyme makes it an essential part of recipes for almost everything--fish, chowders, sauces, stuffings, soups, meats and poultry.

It's an herb with a glorious history, used in ancient rituals to give courage to men going off to war. A Roman favorite, it was introduced to most of Europe by their early conquests.

As a culinary flavoring, it's famous for adding great taste to lamb, but is used for almost any meat. Today, thyme is widely used in European and Middle Eastern cooking, so it is an essential herb for any gourmet cook.

When and Where to Plant: Select sunny location with well-drained soil and sow seed after last frost. Cultivate soil and enrich with vegetable food. For earlier harvest, start seeds indoors. Firm soil over seed.
Care: Keep clipped to encourage bushy growth. Do not water.
Harvesting: Pick leaves as need to use fresh. For drying, cut stems back at time of flowering and dry in dark, ventilated place.
