Arugula is probably the No. 1 preferred green today for salads, after lettuce, of course. With its attractive ruffled leaves, it's also a beauty in the garden. Arugula is super easy to grow, and once yours "rockets" up from seed, you'll be harvesting the delicious leaves for salads all season long.
When and Where to Plant: Hardy Annual. Sow seeds as soon as soil can be worked. Transplanting is not recommended. Sow in 2-4" wide bands at ~30 sds/ft, in rows 8-10" apart. Optimal soil temp for germination is between 45-70°F. Harvest leaves when they are 2-4" tall for baby leaf or at desired size. Cut leaves 1" above soil line to allow for re-growth. Plant every 3 weeks for a continual supply.
