This one is a well-known edible plant, the roots being ground for “chicory coffee”, a specialty of Cajun cooking in Louisiana. Leaves have been used since Roman times for medicines. But the electric blue flowers are what makes chicory famous. Along a roadside in bright sun, this is one of the biggest shows in the flower kingdom. Everyone loves the brilliant blue, even though the flowers close in the afternoon and on cloudy days. The subject of several romantic legends, chicory is one of our most historic wildflowers.

"Careful with these. I orders some to add to my wildflower order and instead got a monstrosity. It says these are 36 to 48 inches but the first year I had an entire orchard over 7 feet tall. Yes 7 feet, you can't even walk through them and they completely obliterated the other wildflowers I had planted. Definitely not what was advertised or expected. The post in the picture is 5. 5 feet tall for reference."
"I scattered these seeds generously in the fall, and much to my delight, they exceeded my expectations this spring! They are blooming after setting tall stalks with buds, and when I first discovered them this past Sunday morning, I did a happy dance on the driveway!! :-) Just two days before I was admiring them along the road blooming and wondering if I could get those lovely blue, delicate blooms this season on the buds that I saw forming. (I also have a friend who uses American Meadows seed mixes and raves as well. ) If you love chicory for the sole reason of enjoying the glorious light blue blooms, American Meadows is your place for this particular seed! Please note that I scattered these in the fall so they could cold stratify and bloom in their first season. I think this is the key if you want blooms as soon as possible. I'm SO delighted!!"
"This wildflower likes it rough. I planted mine by street around the mailbox. Have tried digging them up from side of the road and transplanting into garden. Always died. From seed, without extra care they thrive. Beautiful periwinkle flowers. Good forage plant also"

"medicinal. edible. beautiful. these beauties are perennial therefore they don't bloom the first year so be patient. they are larger that the naturalized ones you see on the side of the road but no less pretty. they tend to fall over in strong winds only to lift their ephemeral but plentiful blooms heavenward for all to behold."
